Today we’re sharing our healthy Costco grocery haul for 2 busy adults who love lifting, being outside, and who don’t love to do much cooking in the kitchen.
Feeling like a real deal adult coming from back Costco cuz Charlie and I have definitely been in the lazy tornado of picking up food and dining out a little more often than we should cuz we were too lazy to drive to Costco (to be fair, we’re not super close and Instacart is PRICY these days).
The good news is the weather is finally doing summer things and it’s warm, sunny, and UV 11 out most days again. The bad new is that my appetite has been pretty non-existent and nothing has sounded good food-wise since it’s so hot and sweaty out (one would think I’d be a pro at handling hot summers considering I lived in Texas 10+ years, lolol).
Lately we’ve been cooking eggs and bacon for breakfast and then pairing it with rice, microwave waffles, or oatmeal. We’ll bulk cook the bacon for the week all at once so it’s one less thing to cook every morning and we can assemble breakfast pretty quickly.
We bulk prep ground beef or ground chicken by tossing it in a pan on the stove over medium heat with onion powder, garlic powder, salt, and coconut aminos. We also bulk prep chicken thighs by covering them in bbq sauce and then grilling them on the Ninja Foodie XL Indoor Grill.
Been smashing lots of fruit, juice, and popsicles (if you see the Johnny Pop Rainbow popsicles at Whole Foods or Sprouts, they are SO good). We’ve also been “on the go” quite a bit and doing lots of driving and adventuring to the beach and up and down the coast.
So we tried to stock up on foods that are portable and easy to travel with, like Perfect Bars, Kind Bars, beef jerky, gummy bears, Noka fruit squeeze packs, dried fruit, etc.
